Black Summer Truffle

These summer truffles are foraged between 100m – 800m in the Peloponnese Taygetos Mountains. They are a cousin of the autumnal Tuber Uncinantum. They can range is size from 30g – 100g, have a more blonde interior and are more delicate to go with lighter spring and summer cooking.
Black Winter Truffle
Nov – Feb
These black winter truffles are found in the northern Pindus Mountains, part of the range that makes what is known as ‘the spine of Greece.' Though these are every bit as pungent, fruity (like dank blueberries) as the class Périgord, there is a more of a focused precision to the aroma and flavor.
Sep – Dec
Our uncinantum truffles are gathered from the Taygetos Mountain range in the southern Peloponnese at 800 m. The mountains overlook the villages of Kalamata and Sparta. The aroma can be classically smoky from Burgundy, but our Grecian finds also have a salty herbal note as well as aromas of cultured butter.
